Easy stuffed bell peppers

The world has not come to an end..lol. I’m just cooking. It’s ok.
Here’s a healthy meal that looks pretty and looks time consuming, but it isn’t... time consuming, I mean.

(3 servings)
3 red bell peppers
Brown 1 pound of lean ground beef
Cook 1 cup of whole wheat rice
Add 1 can of garbanzo beans
Add 1 small can of tomato sauce
Add 1 clove of fresh pressed garlic
1/2 a yellow onion
Italian seasonings (as much as you want; no salt required)

Start the bell peppers first. 350 degrees for 20 minutes. Do not over cook the bell peppers. You want. them to remain firm
Cook 1 cup rice separately ( use instant wheat rice it takes about 10 minutes to cook)

Brown the beef, **Do not drain the beef** add Garlic, onions, Italian seasonings, tomato sauce,
garbanzo beans and add cooked wheat rice and simmer about 10 minutes.

The bell peppers should be ready. Stuff the bell peppers using a spoon standing then up tall. Turn them on their side and add parsley (for color)

If you use instant wheat rice it takes about 10 minutes to cook. The meat mixture takes about 20 minutes to cook (including simmer time of about 10 minutes). If you cook the rice and brown the beef and then add the rice and simmer the stuffing dinner should be done in about twenty minutes, just in time for the bell peppers to come out of the oven.

The entire meal should take about 20 minutes. ( not including minimal prep time) If you clean pots as you go there will be less clean up after the meal.

Bonus recipe: Mediterranean salad
Two English cucumbers
Diced cherry tomatoes
Diced pitted black olives
1/2 red onion*
Gouda cheese crumbles
Italian seasons
2 Tablespoons olive oil

•Prepare onion first ; slice onion into thin pieces and cut in half, soak in ice water for 15 minutes.
Mix the cucumbers, tomatoes , olives, olive oil and Italian seasonings.  Add onions and Gouda cheese and stir thoroughly,  Tada! You’re done. Remember to soak the onions first.

Ok why do you soak the onion in ice water?  I’m glad you asked.  It brings out the sweetness of the onion and minimizes the bitter taste.

I like to drink sweet tea with this meal.
I boil one family size tea bag for about 5 minutes... **do not let it foam up.
Add 1/4 a cup sugar into the  gallon size  pitcher, stir in tea. Add water as needed. I like to boil the tea bag in as much water as I’m going to use in the pitcher ( brings out the flavor)

**Ok. So why don’t you want the tea to foam? It causes the tea to become bitter and you will have to add more sugar.
There you have it. If you can multitask you’re good to go in less time than it takes to go to McDonald’s and get a meal. Plus this is much better tasting. Enjoy!
